Happy 4th to everyone! I hope you are all enjoying your day. WOW…I can’t believe how different things are in just one short year!! This time last year we were celebrating at my sister’s with the entire family…I came home to discover that our cat ate rat poison so I stayed up with her all night to make sure she was okay…then two days later we found out we were pregnant!!!! Now we’re celebrating my daughter’s first 4th of July…I’m so excited.
I wanted hubby to be able to enjoy the day with Abby…so I’m doing all the cooking. LOL yes, be very afraid. For those of you that don’t know me very well…I can’t cook much of anything. Now I have put alot of effort into cooking in the last year. I made dressing at Thanksgiving (I was so thrilled that it turned out okay) and have learned a few dishes here and there. Today…I’m tackling BBQ Chicken! I found a really simple crock-pot recipe online and decided to give it a try. So far so good…it’s smelly awesome!
Last year I made two wonderful desserts….
American Flag Cake
and an Orange Dreamcicle Cake

It was my first time making both of these cakes and both were a big hit with the family! Since it’s only me and hubby this year I figured I would just make a simple batch of brownies…hubby isn’t real big on desserts and I don’t need too many sweets if I want to lose some weight 🙂
Once Abby wakes up from her nap we’re going to do a mini celebration with her…pretty fireworks for hubby to set off outside while she watches through the glass door. Hubby is really big on celebrating the 4th and wanted to make sure Abby’s first one was special (and I’m glad he wants to do this) …we just don’t want to upset her.
I’ll be back later to post new pictures and let you know how the chicken turns out. I’m also trying to figure out how to spice up his pinto beans…any suggestions?
