I am always looking for “sneaky” recipes where I can hide good ingredients in something that my kids will actually eat! This recipe not only has whole wheat and bran flakes, but it also has healthy coconut milk and just a small amount of sugar! This recipe also contains banana and strawberries-both kid friendly and will add natural sweeteners so your kids will feel that this healthy snack is actually a treat!
Ingredients
- 1 medium size banana
- ½ cup olive oil
- ½ cup brown sugar
- 3 eggs
- 3 cups bran flakes
- 1 ½ cups whole wheat flour
- 1 cup all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ? cup low fat coconut milk
- 1 cup strawberries, washed, topped and cut into quarters
Directions
- Preheat oven to 400 degrees.
- In a mixer, combine banana, olive oil and sugar. Mix on medium until creamy and smooth. Add one egg at a time, blending thoroughly after each egg.
- In a separate bowl, combine bran flakes, both flours, baking powder, baking soda and salt. Add to banana mixture and mix on medium until blended. Add coconut milk and strawberries and mix until combined.
- Scoop mixture into mini-muffin pan and cook for 20 minutes or until top springs back lightly when touched. If baking regular sized muffins, increase the time to 22-28 minutes.
