I am always on the search for healthier snacks to try, especially snacks that Abby can enjoy with us. This year I have tried hard to get my family to eat healthier and finding food we can not only enjoy as a snack but that I can also use in recipes is a huge plus. I had never tried Old London Foods before and I was excited to give them a try and see how well hubby and Abby enjoyed them. I was sent three boxes, Melba Snacks: Sea Salt, Bagel Chips: Garlic & Herb, and Melba Toast: Rosemary & Olive Oil, to try out:
Since I typically enjoy crackers with my chicken salad, I decided to try my favorite, the Garlic & Herb Bagel Chips, in place of my usual crackers and I am so glad I did! The taste was so great and it’s definitely a much healthier choice for me! Even hubby seemed to like the the Sea Salt Melba Snacks; we haven’t let Abby try any just yet due to the snacks containing soy.
I even came across this yummy looking recipe that I plan to try soon
(recipe borrowed from Old London):
Ingredients:
20 Old London Sea Salt Melba Snacks, ground fine in food processor
1 lb. Shrimp, peeled and deveined
2 Eggs, whites and yolks separated
1 tbsp. Heavy cream
2 ribs Green celery, diced small
1 bunch Chives, minced
1 cup Flour
2 cups Olive oil
1 pinch Cayenne pepper
Salt, to taste
Directions:
In a food processor, pulse the shrimp, egg whites, and cream until combined but still chunky. Add the chives, celery, and cayenne pepper. Form the shrimp paste into small balls. Dredge the balls in flour, then into the beaten yolks, and then into the ground Melba Snacks.
Heat the olive oil in a heavy skillet. When hot, add the shrimp balls and cook until well browned. Remove from the pan and transfer to a paper towel. Season with salt. Serve immediately.
