So I decided I wanted to do something really awesome and surprise my little brother for Valentine’s Day this year. While my sister and I are both married with little ones, he’s still single and I knew he had been a little down recently. He had lost a good friend recently and I knew he needed a little cheering up. Being three hours away there’s not much I could do, I would go visit except for dealing with all my doctor visits and of course upcoming surgery. Then I remembered a picture he posted on Facebook not too long ago…
Oh yes, he posted this with a little *hint hint* in my direction since he knows I always bake when he comes to visit. I told him that he should come for a visit so I could make them for him; unfortunately with his insane work schedule a visit just wasn’t going to happen anytime soon.
That’s when I decided these oreo brownies would be a perfect surprise for him! I told my dad my plan, I went shopping, and of course I lost track of time. I didn’t mean to but with all the pain and craziness of getting ready for surgery I lost track of days.
Anyways, I woke up and realized that if these were to reach him in time they simply must be made and sent that very day. I set to work and realized that these yummy looking treats are super easy and quick to make. Really, it took me longer to spread the peanut butter because I’m a perfectionist than anything else. Of course when I went shopping I forgot packaging items so I had to make do with what I had but I knew he wouldn’t care.
I got his surprise dessert made, Valentine cards made for him and Abby’s Grumpy & Nana, got both me and Abby ready and out the door in time to get these sent off to him! Of course this is me so nothing goes as planned, although they showed to arrive on V-Day they of course didn’t. It was okay, my dad knew to expect the box. I got home from surgery and found my brother’s awesome post on Facebook, his surprise had arrived and he was thrilled! I could tell I had made his day and that meant so much to me! I might not be able to do much but dangit it I’m going to do all I can to cheer someone up, especially when it’s my little brother!
Sorry… no actual pictures this time. I felt terrible that day and really just wanted to get done on time. I did end up keeping one to try and it was pretty good. These were a HUGE hit with my brother and with his co-workers, supposedly one or two of the guys he works with have asked to place an order HAHA!
I decided since they were so easy to make and were such a huge hit that I should share the recipe with all of you, these would be great for parties or a quick treat. Really there’s not much of a “recipe” to follow… just simple steps.
Double Stuffed Oreo Peanut Butter Brownies
Ingredients:
-Package of Double Stuff Oreos
-Brownie Mix (will need eggs and oil)
-Paper Cupcake Liners
1. Take an oreo and spread peanut butter on top, place another oreo on top of the peanut butter and spread peanut butter on the top of that oreo.
2. Sit stacked oreos in paper cupcake liner
3. Prepare brownie mix according to box direction, pour brownie mix into cupcake liners completely covering oreos.
4. Bake at 350 for 20 minutes, baking time might vary just a bit depending on your stove… I had to bake for about 25 minutes.
Let cool

Mine made a dozen, I might have gone a bit overboard pouring the brownie mix over the oreos and filled the liners too much but they turned out awesome. I also had a little bit of brownie mix still left in the bowl but I was just too tired to make any more. Would probably make a dozen and a half up to two dozen.
Use Paper liners… very important!
