With all the snow, winter storm warnings, and being stuck at home, we are starting to get a little creative in the kitchen. Although I took care of grocery shopping ahead of the winter storm and made sure to stock up, I didn’t quite pay attention in the snack area and that resulted in the lack of snacks…and I was craving cookies.
So it was time to experiment with what I could find in the pantry!
I remember seeing recipes for cookies made from box cake mixes and since I have several box cake mixes, I decided to give it a try!
So we made Strawberry Cake Mix Cookies!
Oh my gosh, these were super easy to make! I was so surprised at just how easy it was and will definitely make again using different flavors.
All you need is 3 simple ingredients: The cake mix, eggs and oil

Simply combine 2 large eggs, 1/2 a cup of oil and the cake mix in a bowl. Once completely combined, scoop out just like you would cookie dough. It’s super sticky so I actually put it in the fridge to chill for about 15 minutes. I actually could have let it chill a little longer but was impatient so I dealt with slightly stickiness. Now most will use an ice cream scoop and scoop out neat, even sections …. yeah that didn’t happen. It was late, I was tired, so this is how our cake mix cookie dough was placed on the cookie sheet. Hey, we are all about imperfections around here!


I let the cookies bake for about 12-15 minutes, they did turn just a tiny bit brown in some places on top. It’s extremely important NOT to over bake the cookies! I was actually worried I baked them took long but they turned out perfect!

The cake mix cookies were perfectly soft in the center and just the right about of crisp to the edges. I told my husband my scooping had been a mistake and I needed to correct it next time, he said maybe my mistake turned into a plus this time since the cookies turned out just right. Whatever it may be, we had the best snack to end our Valentines Day!

I did add icing to two of the cookies but they honestly didn’t need the icing, they are plenty sweet on their own. If you like, you can add icing of your choice or add in chocolate chips, white chocolate chips, pecans, get creative and have fun creating your own cookies!
Ingredients:
- box cake mix
- 2 large eggs
- 1/2 cup oil
**additional items you can add: icing, chocolate chips, white chocolate chips, pecans, etc.
Directions:
- combine eggs, oil and cake mix in a bowl, stirring until well mixed.
- once combined, either chill for 15-20 minutes or scoop out onto a cookie sheet lined with parchment paper.
- bake for 12-15 minutes. Make sure not to over bake!!
- let cool and enjoy!
